Airport Honey Used in Local Brewery's New, Fall-Inspired Beer

Dallas, TX – Something sweet is “brewing” in the air at Dallas Love Field (DAL). DAL airport property tenant On Rotation Brewery & Kitchen has partnered with the Dallas Airport System to launch a fall-inspired beer titled “Buzz the Tower” flavored with peanut butter and a special ingredient – honey from the Dallas Airport System’s beehive at Dallas Executive Airport (DEA).Bees + honey

The DEA beehive houses approximately 18,000 bees, but this number fluctuates throughout the year as the seasons change and can climb to over 50,000 during the spring or early summer. The bees can potentially store over 100 pounds of honey during these seasons. This year, the airport’s beehive contractor, Alvéole, harvested roughly 20 pounds of honey in June alone. Since then, nearly 30 pounds have been produced, and about two pounds were used to flavor approximately 90 gallons of beer produced.   

“This is such a cool way to share our honey with the community and spread awareness about the vital bees that produce it,” says Isaac Ellison, Environmental Manager for the Dallas Airport System. “When On Rotation reached out about a potential collaboration, we jumped at the opportunity to be a part of this project,” he continued.

On Rotation joined the Braniff Centre at DAL located at 7701 Lemmon Avenue in 2021 and has amassed quite a following for its ever-changing lineup. What started from a DAL tweet about the beehive in May 2024 on X became a mouthwatering, sweet delight for patrons of the nine-year-old brewpub. In addition to craft beers and seltzer, it offers a full food program with made-from-scratch kitchen items. Intended to remind consumers of warm toast topped with honey and peanut butter, the brew’s recipe works well without a large amount of honey, thanks to the genius of brewmaster Dan Heinzerling.On Rotation 2

“As a small batch brewery, we like to use as many local, fresh ingredients as we can in our beers and honey produced in Dallas, especially at a local airport no less since we are located right next to Dallas Love Field and have an airport theme to our brewpub, seemed like it was meant to be,” says Jacob Sloan, co-founder and co-owner of On Rotation Brewery & Kitchen.

After several brainstorming sessions and a month-long brewing period, On Rotation will tap and release the “Buzz the Tower” beer on Friday, November 8, 2024.

According to Sloan, “Buzz the Tower” is a 5.9% ABV Vienna lager that pairs well with spicy foods for a unique contrast and can complement sweet and savory flavors. It can be ordered anytime while enjoying plane spotting at the brewpub throughout November. This is the first time the honey has been used in a food or beverage item, but the two entities hope to produce the same or a new brew using the DEA honey in the future.
